is it possible to use multiple relay hosts in ciphermail if configured in
postfix with postmap?
Or will that destroy the whole config?

Yes that is possible. The only requirement CipherMail has is that the
back-end is configured as a Postfix after queue filter. For the rest you
are free to configure Postfix in any way you want.
