Hello,I'm currently trying to setup the virtual appliance version of the gateway. So far the gateway is successfully encrypting the outgoing messages, but unfortunately the incoming messages come up only with the -----BEGIN/END PGP MESSAGE-----, not the decripted version.
I imported the sender's public key and set it as trusted.
Any thoughts on what I could be missing ?

I think you have not fully understand PGP encryption.
You of course need to import YOUR private key.
Also, you need to set settings on users and/or domain, so mails to incoming mail to your domain is decrypted.

For one, make sure you have the correct private key installed.
The most likely reason is that you did not enable "Enable PGP/INLINE to
internal" (do this for the global settings).
As to why "PGP/INLINE to internal" is not enabled by default see FAQ
item "Why is Incoming PGP/INLINE not enabled by default?":
